Dry roast all the spices listed under Chettinad masala on a low flame until it turns crispy. Leave it to cool and grind it to a fine powder. Chettinad masala is ready.
Now grind ginger garlic to a fine paste.
Heat 3 tbsp oil in a pan or kadai on a medium flame and add curry leaves. Sauté for a second and add chopped onion and ginger garlic paste and sauté for a min.
Now add freshly grounded Chettinad masala and cook for some more mins or till oil starts separating. Now add chopped tomato and cook.
Add turmeric powder and red chilli powder along with salt and cook for some more min. At this point you can add little water if requires.
Now add paneer cubes and gently coat with the masala. Cover with the lid and let it cook for 3 to 4 min on a medium flame.
Off the gas burner and add 1 tsp lemon juice. Garnish with chopped coriander leaves. Paneer pepper Chettinad goes well with paratha, nan and roti.
