Instructions to make Puri Tarkari:
For tarkari. Peel & chop potatoes i cubes. Boil potato cubes and tomatoes together till they are half done. In a pot add oil. Add zeera, sabut dhania, kalonji, rai, methidana, curry patta, sabut lal mirch.After spluttering add finely chopped onions and fry to translucent. Take out tomato from water & add in onions. Mash and fry with spoon. Add gajar ka achar, lal mirch powder, haldi, salt and fry masala till oil seprates.
Add half boiled potato cubes in masala and mix.add 1 cup potato water (from boiled pot) and let it cook on medium heat till potatoes are soft. Mash some potatoes to give blended texture. Cook til required consistency. Add hari mirch and hara dhania before serving.
For puri. Mix together maida, atta, soji, salt and sift well. Make a well in centre and gradually add water and knead the dough. Add oil in between. When a soft dough is kneaded. Cover it with samp towel/ kitchen Cloth and keep it for 1/2 hour. Make small balls (pairas) of dough. Knead each dough in round shape. Apply oil when rolling puris.deep fry in oil. Serve hot Puri Tarkari and Enjoy
