    2. Make ready 1 cup Gram flour (besan)

    4. Prepare 1/2 cup Semolina
    5. Make ready 1/4 cup Pistachios coarsely crushed
    6. Prepare 1/4 cup Cashewnuts coarsely crushed
    7. Prepare 1/4 cup Almonds coarsely crushed
    8. Get 1 teaspoon Green cardamom powder
    9. Get 1 pinch Nutmeg powder
    10. Take 20-25 Roasted almonds
    11. Make ready 1 tbsp Melon seeds
    12. Prepare 1 1/2 cups Powdered sugar

    14. Get 1 1/2 litres Full Cream Milk
    15. Get 25 Almonds blanched and peeled
    16. Make ready 20 Cashewnuts soaked
    17. Make ready 30 Pistachios blanched and peeled
    18. Get 3 tablespoons Melon seeds soaked
    19. Get 3 tablespoons Poppy seeds soaked
    20. Take Saffron a few strands
    21. Prepare 1 1/2 cups Sugar
    22. Prepare 8-10 Green cardamoms
    23. Make ready 1" Cinnamon stick
    24. Prepare 8-10 Black peppercorns

    Instructions

    Instructions to make Atta-besan Laddos,Kesar-badam thandai:

    1. Heat Β½ cup ghee in a non-stick pan. Add gram flour, mix and roast on medium heat till fragrant and golden. Transfer onto a plate and cool. - Heat 2-3 tablespoons ghee in another non-stick pan. Add wheat flour and roast till fragrant and brown. Transfer onto a plate and cool.
    2. Similarly, roast semolina with remaining ghee in the same non-stick pan.
    3. Combine the roasted flours into a big bowl and mix. Add pistachios, cashewnuts, almonds, cardamom powder and nutmeg powder and mix. Add sugar and mix well.
    4. Divide the mixture into equal portions and shape them into laddoos.Place roasted almonds and melon seeds over the Ladoos and slightly press with palms.Atta besan Ladoos are ready.
    5. For kesar badam thandai….Grind together almonds, cashewnuts, pistachios, melon seeds and poppy seeds with a little milk to a fine paste. Bring milk to a boil in a pan. Add saffron and mix.
    6. When the milk begins to boil add sugar and simmer till the sugar melts. Grind green cardamoms, cinnamon and black peppercorns to a fine powder.
    7. Add the paste to the milk and mix well. Simmer for three to four minutes. Add the powdered masala to the milk and mix well. Chill the milk.
    8. Serve Atta besan Ladoos and kesar badam thandai on the festive of Holi.Enjoy
