    1. Place a refined flour or Maida in a bowl, make a well in the center, add pinch of salt and little bit of oil and mix.
    2. Add lukewarm water and knead into a dough.
    3. Cover and rest for 10-15 min to rise.
    4. Divide the dough into small equal portions. Press a portion of the dough flat on a rolling board and roll out. Using little plain flour for rolling and roll it on round shape like puri.
    5. Heat oil in a deep pan and add the puri and fry it.
    6. Aalur tarkari - - Cut the potato in cubes.
    7. Heat oil in a pan add paachforon and bay leaves and some red chilli whole and saute.
    8. Add potato and fried. Add salt,black pepper and green chilli and mixed.
    9. Add water and cover and cook till the potato are completely cooked.
    10. Serve hot with Bengali Luchi.
