Steps to make Restaurant Style Rajma Masala:
In a bowl soak rajma in enough water for 7-8 hours or overnight. In the cooker add rajma, water, salt and half teaspoon turmeric. Stir and cook on high for 5 whistles,the rajma is done, set aside.
Heat 1 tablespoon oil in a pan on medium heat, add cardamom pods, cinnamon stick, chopped onion and saute for 4 minutes. then add turmeric powder,chill powder, ginger paste, garlic paste, cumin powder, salt cook for 2 minutes.
Then add tomato puree and half cup water and cover the pan with a lid for 10 minutes in medium heat.
After 10 minutes add garam masala powder, rajma masala.cook for 2 minutes and then add cooked rajma. Then add half a cup of water, cover the pan for 15 minutes in very low heat.
After 15 minutes the curry will thicken.switch off the flame.
Garnish it with ginger julienne and chopped green chillies and ring onion.
Serve hot with rice or any bread.
