    1. Take 300 gm mutton mince
    2. Prepare 250 gm long grain rice
    3. Take For the Kofta
    4. Prepare 1 large onion chopped
    5. Get 2 fresh coriander leaves sprigs chopped
    6. Get 6-8 green chilli chopped fine
    7. Take 1/2 tsp garam masala
    8. Take 1 tsp red chilli powder
    9. Get 2 Tbsp roasted gram without skin powdered
    10. Take For the Biryani
    11. Get 4 medium size onion chopped fine
    12. Take 1 bay leaf
    13. Take 6 cloves
    14. Get 4 green cardamoms
    15. Take 1 inch cinnamon stick
    16. Make ready 3 glass mutton stock
    17. Make ready pinch saffron
    18. Make ready 1 Tbsp ghee
    19. Take as needed Oil to fry
    20. Get to taste Salt

    Instructions

    Steps to make Kofta Biryani:

    1. Grind the mutton mince in a blender and set aside
    2. Wash the rice and soak for 15 mins. Drain and set aside
    3. Mix the mince with chopped green chillies, chopped onions, red chilli powder, chopped coriander leaves, garam masala, roasted gram powdered. Mix well to make koftas
    4. In a wok heat oil and make koftas and fry in batches golden in colour. Set aside. Retain the rest of the oil
    5. In a wok heat 50 gms oil and fry the chopped onions and add bay leaf, cardamom, cloves and stir. Fry the onions till golden and add the rice to fry for 1-2 mins
    6. Add the mutton stock till 1/4” level above the rice. Add salt, ghee, saffron. Cover and cook once the rice comes to a boil for 7-8 mins until the rice is 2/3rd cooked. Add the koftas carefully and cook on Dum for 10 mins. Serve hot
    7. Plate and enjoy
